The history and origins of matcha
Matcha, a finely-ground powdered green tea, is much more than just a drink; it reflects a rich cultural tradition and an ancient history that goes back centuries. Originally from China, it was in Japan that matcha really came into its own, becoming a symbol of refinement and ceremony.
Chinese roots
The first traces of tea ground into powder and mixed with hot water date back to the Tang dynasty in China (618-907 A.D.). In those days, tea leaves were steamed, formed into bricks for storage and distribution, then ground into powder before being consumed.
The Japanese renaissance
Although the concept of powdered tea originated in China, it was in Japan that matcha truly evolved and flourished. In 1191, a Japanese Buddhist monk named Eisai introduced powdered tea to Japan after studying in China. Eisai, renowned for his contributions to the spread of Zen Buddhism, saw tea as an aid to meditation, emphasizing its health-promoting properties.




Production and cultivation techniques
Tea plants destined to become matcha are grown in the shade for around three weeks before harvesting. This process increases the chlorophyll and amino acid content of the leaves, giving matcha its bright green color and distinctive umami taste. After harvesting, the leaves are steamed to stop fermentation, dried, then the stems and veins are removed, leaving only the most tender and nutrient-rich parts, called tencha. Finally, the tencha is ground slowly with a stone grinder to produce a fine powder: matcha.

Today, matcha is enjoyed all over the world, as much for its health benefits as for its unique taste and culinary versatility.
